ABSTRACTThe volume of diploma: 69 pages, tables, formulae, 88 84 literary sources and 6 sheets of graphic part.The object of the development is the production of new types of bakery products, rich dietary supplement zagal′nozmìcnûûčoï action. The aim of this diploma project is reconstruction of the technological line of OJSC "Kyivkhlib" Not hlìbkombìnatu for the production of small artificial puff products enriched dietary supplement. The project conducted a review of the literature of domestic and foreign authors on the basis of which defined the direction of their research, the end result of which is the creation of a new functional food product.
