РЕФЕРАТ

Обсяг дипломного проекту: сторінок, 69 таблиць, 88 формул, 84 літературних джерел та 6 аркушів графічної частини.
Об’єктом розробки є виробництво нових видів хлібобулочних виробів, збагачених дієтичною добавкою загальнозміцнюючої дії.
Метою даного дипломного проекту є реконструкція технологічної лінії ВАТ «Київхліб» Білоцерківського хлібкомбінату для виробництва дрібно штучних булочних виробів збагачених дієтичною добавкою.
В проекті здійснено огляд літературних джерел вітчизняних та зарубіжних авторів, на основі якого визначено напрям власних досліджень, кінцевим результатом якого є створення нового функціонального харчового продукту. В проекті виконано технологічні розрахунки, подано характеристику сировини, яка використовується при виготовленні хлібобулочних виробів; з’ясовано технологічні особливості хліба; розглянуто проведення технохімічного та мікробіологічного контролю на підприємстві; розраховано виробничі потужності та інженерно-технічне забезпечення; розроблено проект автоматизації та оптимізації виробництва; дано рекомендації дотримання умов охорони праці на ньому.

The project conducted a review of the literature of domestic and foreign authors on the basis of which defined the direction of their research, the end result of which is the creation of a new functional food product.
