Молекула альбуміну здатна до утворення комплексів з дуже великою кількістю інших сполук, зокрема з жирними кислотами або речовинами стероїдної природи. Негативний заряд молекули, обумовлений наявністю на її поверхні карбоксильних груп, полегшує можливість зв’язування іонів металів і позитивно заряджених барвників. Велика кількість реактивних груп молекули альбуміну обумовлює її здатність до зв’язування та нейтралізації токсинів як бактеріального походження, так і продуктів обміну речовин. Здатність утворювати комплекси дає можливість виконувати транспортну функцію – зв’язування та перенесення з кров’ю продуктів обміну речовин (білірубін), мікроелементів, вітамінів, лікарських речовин, гормонів і т. д.
